Provenance
Our pork … a summary
Our pigs come from Morleys Farm, South Creak on the Holkham Estate in North Norfolk, a third generation farming family who rear to traditional methods and adhere to the Red Tractor and Freedom Food high standards of welfare.
The detail … about the farmer …
Tim and Barbara and family have been producing free range pork on the Holkham Estate for over 60 years.
The detail … about the breed …
Morleys Pork , is a unique breed and the product of several years of careful breeding to produce a flavoursome end product . The Morley Pig, is a cross of three breeds, Large White, Duroc and Landrace taking the best traits from each.
The detail … about the husbandry of the pigs …
Morleys Pork is free range, with the animals kept outside from birth to slaughter. The Morleys sows used for breeding are a unique breed and the product of several years of careful breeding, crossing Large White, Landrace and Duroc, taking the best traits from each. The sows are kept together in their groups until about a week before they are due to give birth, at which time they are moved to individual farrowing paddocks, allowing them time to settle and prepare their huts for farrowing without fear of disturbance from other sows. Once the piglets are weaned, the sows return to their groups ready to meet the boars again. The herd is allowed to roam free and grow naturally without hormones or antibiotic growth promoters. They are fed on a natural balanced diet, free from Genetically Modified (GM) products. Outside they spend their entire lives in the fresh air, they have shelter when they need it in the form of large, airy tented barns in each paddock, with plenty of bedding straw. This extra space and activity not only ensures a vastly improved standard of living and welfare, but also results in the pigs growing at a slower rate, for the simple reason that they are burning off more calories than a pig enclosed in a concrete pen all of its life. This results in a firm muscle texture and well balanced fat coverage which means that the resulting meat has a traditional flavour and succulence that is recognised in the meat industry and amongst top chefs as being of superior quality. The farm is both Red Tractor and Freedom Foods accredited, which guarantees the highest standards of welfare … in short … these are happy pigs!
